Quick Tomato and Onion Bredie

This is a simplified version of the traditional Tomato and Onion Bredie, perfect for a quick and tasty weeknight meal. Mama Zola always said, "The best meals are made with love, even if you don't have all day!"

Ingredients:

Instructions:

  1. Heat the cooking oil in a large pot or pan.
  2. Add the beef mince and cook until browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the pot and cook until softened.
  4. Stir in the chopped tomatoes, tomato paste, sugar, and mixed herbs.
  5. Season with salt and pepper to taste.
  6. Bring to a simmer, cover, and cook for 30-40 minutes, or until the sauce has thickened.
  7. Serve hot with rice or mashed potatoes.

Tips from Mama Zola:

"Don't be afraid to add a pinch of chili for a little kick! Also, a bay leaf during simmering adds a lovely depth of flavour. Remember to remove it before serving!"
